Summary:
Vegetables play an important role in the balanced diet by providing not
only energy but also by supplying vital protective nutrients like
minerals, antioxidants and vitamins. Consumption in sufficient quantity
provides all required essential nutrients and a fair amount of fibres.
Vegetable also play an important role in neutralizing the acid produced
during digestion of proteins and fatty foods, and thus promotes
digestion and also prevents constipation. According to ICMR, about
300g of vegetables (125g leafy, 100g root and 75g other vegetables)
per capita per day has been recommended. But the availability of
vegetable in India is only 145g per capita per day, which is very low as
compared to the recommended dose. Vegetables provide nutritional
security which is a major problem in our country. Moreover, more
economic growth can be achieved by producing vegetables from per
unit area which will ultimately uplift the socio economic condition of the
farmers. The present manuscript just aims to outlines some of the
basic yet important facts about vegetables Various databases related
to Vegetable sciences also given as a seprate chapter to highlight use
informations. Nearly 500 obectives questions have ben framed related
to vegetable sciences to enable students of various competititve
examination to prepare well.This will help both teachers and the
